Beluga sturgeon, which is called elephant fish in Iran, is the most valuable and rarest sturgeon in the world. This fish is the largest freshwater sturgeon in terms of size.
This fish is very important in terms of strategy and environment in Iran.
Beluga caviar is mainly found in the Caspian Sea and the Black Sea.
 

Beluga fish take up to 20 years to mature in the wild and can live up to 118 years. But the same fish matures in 7 to 10 years, which is very economical.
The value of elephant fish is not only because of the caviar obtained from it, but the properties of its meat and skin are famous in the world, and it has many fans raw or cooked.
According to the FAO report, in 2019, Iran took the first place in the production of farmed beluga or elephant fish, which is the most valuable farmed caviar in the world.
Currently, 3,500 tons of sturgeon meat are produced in Iran.
Of this amount, 1000 tons worth more than 10 million dollars have been exported abroad.
Elephant fish is a rich source of protein. The nutritional value of this material is in terms of building body tissues and strengthening the immune system.
The meat of this fish has omega-3 fatty acids, which have been proven to have an effect on the health of the heart and blood vessels and the brain and reduce inflammation.
